If that does not work, there is a separate pressure switch on the high side a/c line that forces the fans to run anytime the a/c is on high. Make sure the connections are tight. A tstat failure forced the car to go into a recovery mode where the fans stay on at full blast and the temp gauge pegs to zero. I don’t know why gm made it such that it overrides the temp gauge but the tstat is likely your problem. Very common c7 failure. it is indeed dumb that the temp gauge gets blanked out essentially..
